Beef rump roast + little bit of vinnegar, red pepper flakes, Tabasco, and Tabasco Ketchup, at about 200 degrees for three hours = Heaven.

how big is the roast? 3 hrs at 200 seems like a short cook time.

That's next. I use the crock pot and then shred it and cook it down over low heat for a few hours.

MORE TIME...MORE TIME!!!!!
I make deer roast, pork shoulder butt, beef, etc, but I go 10+ hours on some of them to get that nice soft easy shred.

beer, maple syrup, cayenne, cumin, cinammon, garlic.....ah, smell it now.

No hickory, no mesquite, its not BBQ...

where do you get the smokey-ness from? a bottle? bah...

PUT MEAT ON GRILL for 2hrs using WOOD not charcoal!!!

then put it in a crock pot....

otherwise you are just boiling meat!!!
