i got some of the cured Chorizo from my brother for Christmas and well i would venture to say it is better than bacon

I don't think your supposed to eat it  When I cook it on the grill, I just slice the casing and dump the meat out. When I boil it in my peanuts, I just take the casing and all out when they're done and toss it. All the flavor and oil goes into the water and peanuts. The sliced sausage looking stuff in the first post looks like the Johnsonville Chorizo.
