The Chorizo I buy locally has a very thick, tough casing with metal rings on the ends. I don't think your supposed to eat it When I cook it on the grill, I just slice the casing and dump the meat out. When I boil it in my peanuts, I just take the casing and all out when they're done and toss it. All the flavor and oil goes into the water and peanuts. The sliced sausage looking stuff in the first post looks like the Johnsonville Chorizo.

I got the joke.

When I was stationed in San Antonio, we used to get some killer chorizo y huevo burritos from a place on St. Mary's called El Milagrito. They were the best!

Tell me about it. When I got there, Pariah was all the talk of the town because they had just got signed to a record deal. Then they sort of just fell off the face of the earth.
