I don't think we Americans eat a great deal of lamb and I'm told that American raised lamb isn't as flavorful as say New Zealand lamb. Either way I've started preparing lamb once or twice a week for the wife and I. I'm just sick of chicken and beef all the time (I won't complain about pork,...I love pork) and the Seafood (save the salmon $$) sucks around these parts.
I can source rib chops and loin chops. Loin chops are basically the T-Bone of the lamb and you have to work a little harder to get the meat from the plate to you mouth. I prefer the rib chops. I found that treating the lamb with a bit of vinegar or verjus helps mellow out the strong taste of the lamb. Salt and pepper and sear like you would a steak in a cast iron skillet,...delicious.
I don't mind the smaller portions as I'm trying to get my wife and I used to the idea of moderation.
So do you eat lamb on a regular basis and if you don't mind; be so kind as to tell me if you are American or from some other lamb eating part of the world.

I too treat the lamb with vinegar to "normalize" the flavor a little bit...as far as my American tastebuds go. I like it, but can't really handle it all that often. This thread gets me goin to try some other ideas

Upon his arrival he roasted a leg of lamb and I was instantly hooked. You have to eat it when it's hot or it will get tallowy.
I've tried to roast a leg of lamb in the past and failed miserably but I have some ideas and will try another one for the spring fertility celebration (AKA Easter). |

*strokes beard while dreamily thinking ahead towards BBQ season. | I just bought a tiny bbq pit, then took it back to sears because of brokedom. I'll surely be buying it back once I get me some more lamb

mmmm | mmmm,...We have a greek restaurant that should (if they don't already) serve lamb kabobs. They do Gyros (is that really lamb ) which I love,...
But I'm more talking about preparing it at home as a family meal,...not so much going out to eat for it.
I do think the results will be slightly skewed since there are a lot more Americans on TB as opposed to non Americans,...I'm just curious to see if my assumptions are true or just assumptions.
FWIW,...I also made spaghetti with a goat burger tomato sauce. I treated the goat burger like a sausage adding fennel,...a mixture of verjus, stone ground deli mustard and heavy cream. It was also really good,...but I'm wonder how many people will think I'm a weirdo for eating ground goat. |

| | Yeah, I've got the moves like Jagger. | | Join Date: Oct 2006 Location: G.R. MI | | | I dig lamb shanks a lot! I don't make them as much as I'd like because of time constraints, but I eat lamb maybe once a month or so. (Usually it's ground lamb made into meat balls.)
I disagree with the American lamb being of lesser quality than lamb raised and slaughtered half way around the globe. I buy most of my lamb and mutton from a Middle Eastern store about a mile from my house. All the meat they carry is halal, and it's all fantastic! (They do have a few things I've not had the balls to try. Come to think of it, they probably have those too...) They carry bulk spices there too, and I'm amazed at how cheap you can get a 1/2KG bag of stuff for compared to what a 3oz jar costs at a super market!
