I like Beef fajitas.... cut into strips, cooked on the grill with a chunky pico and sour cream. If i use cheese it has to be shredded sharp cheddar. Flour tortillas.

Mesquite grilled beef, boracho beans, pico de gallo, roasted red salsa, guacamole, corn or flour tortillas...and it all has to be made in Texas. Ain't nothing like real Tex-Mex.

My ideal burrito is from a local place... flour tortilla, rice, black beans, shredded pork, some guac, sour creme, lettuce, mild salsa (for flavor, I prefer a bit of bite, but this is the best salsa EVER) ... the thing weighs about 3 lbs. for $5.50

Take whole chicken breasts and let them marinade in white wine, cumin, black pepper and Pickapeppa sauce all day.

Cut up red, yellow, green peppers, mushrooms, and onions and let them sit in a little bit of garlic cloves and salt all day.

Fire up the grill. Place chicken on grill, place vegetables in grill basket on grill. Cook until tender.

Heat up a cast iron flat skillet inside to toast the flour tortillas.

Add Chicken, veggies, sour cream, Picante, shredded jack and a tiny bit of Chipotle Tabasco sauce to tortilla. Wrap up.

EAT with preferably a Tecate.

What's with the sour cream, mushrooms and black beans? Leave it to the white boys to screw up good Mexican food!

Had to eat them today at the small place called Jalpenos near my office. Just can't get enough hot sauce on them.
