He's faking it. I love "No Reservations", but there's no way he digs all the indigenous dishes he eats. Sometimes it's like watching Bear Grylls chow down.

As for Tony, watch the Top Chef that he judges, (I only saw the first and second episodes) and he had a few things he didn't like.

I don't know of any place in the Ganges where bodies "cluster". It's polluted in stretches, but "cluster in a certain area of the Ganges": that's something I never knew
I saw him eating at a confectionery shop in Venice and he said he didn't like sweet stuff  Maybe it was tongue-in-cheek but I'm not sure.

and I am a fan of his current show "No Reservations"
If you really want to know his background I recommend reading "Kitchen Confidential"
I am a professional chef and I think its pretty honest and a hilarious read
I can say I have met a few people in my work history that fits some of these characters that he has worked with
I do know he doesnt like Natto which is Japanese fermented soybeans
I personally love it but then again I cant see myself eating tree grubs
