Apply the sauce late in the process; otherwise you just cook it right off.

Use a mop sauce for the actual cooking. I like equal parts black coffee and cider vinegar. Baste with the mop sauce while smoking to keep stuff moist and tender. BBQ sauce goes on the last 10 minutes on the grill or so.

You can't overcook chicken wings.

BBQ = what wood used for making the charcoal DOES make a difference! Mesquite... mmmm

It's all about the dry rub. Thick, wet sauces have sugars, which caramelize and burn while grilling. Save any sauces for near the end of grillin'

And if you're stuck with a gas grille, buy one of those wood chip smoker boxes to set in the grille.

Jeff, it depends on the cut of meat and whether you are using smoke or indirect heat or both.

Get an electric smoker (very easy to control heat/smoke), some hickory chips, and go straight for the pork butt recipe. Pulled pork sandwiches Carolina style.
