We've ended up with a set of Globals (IMO incredibly comfortable and very lightweight) and a number of Wustof Classics which have more heft to them. A nice combo to have. |

Didn't know you could buy hollow ground chef's knives.
I have a couple of hollow ground straight razors and they are a cinch to sharpen. My chef's knives OTOH are a pain.....
I have this one particular serrated bread knife that I always seem to nick my thumb with.
