i was at the local supermarket and saw some chorizo in the refrigerator section, so i picked some up thinking mmmmm chorizo.  then i got home and put it in the fridge. now i am wanting to cook the chorizo but for some reason i am having a creative cooking brain fart. anyway, i need some ideas so that i may eat the tasty chorizo

or make beans and rice with it. Start making rice then crumble it and cook it with onions garlic, chili powder, then add beans. Add the rice, stir, eat

I scramble it up with eggs (cook the chorizo a little bit before dumping the eggs into it). It tastes best when you don't over cook and dry it out though.
Or use square cut hash brown potatos; brown potatos to desired texture, then mix the chorizo in and finish cooking a few more minutes.
Yeah, you can also mix it with beans for burritos....mmmm. |

I made some soy chorizo and egg tacos about 2 weeks ago. I was making some soy beef and potato tacos yesterday when I discovered some left over chorizo in the fridge... I promptly threw it away, but not before thinking of NJL.

2 lb Tenderized Stew Beef
2 lb Ground Beef
1 lb Ground Turkey
1 lb Chorizo
2 1/2 cups Tomato sauce
2 Onion; chopped
Garlic to taste - chopped
2 ts Salt
2 ts Cayenne pepper
2 ts Tabasco Sauce
2 tb Oregano; dried, crushed
2 tb Cumin; ground
10 Red peppers; 2" long (opt)
8 tb Chili powder
2 tb Paprika
5 tb Masa Harina Flour
2 cans (15 oz) Black Beans, drained
2 cans (15 oz) Cark Red Kidney Beans, drained
1 can (32 oz) Diced Tomatoes
OR
You can do the easier version and just get two packets of Wick Fowler's 2 Alarm Chili mix, plus the meats and canned things on my list. But my version has more cumin than the Wick Fowlers does. Otherwise, I was trying to make his mix as my starting point.
Start by cooking all the meats until they are pretty thoroughly browned. Drain the living hell out of the meat, because chorizo tastes great but adds a LOT of grease. Add the tomato sauce, 4 cups of water and all the spices, BUT NOT THE MASA HARINA, cover and cook for a half hour.Make a paste with the Masa Harina in warm water to thicken the chili. Add the paste, the beans and the tomatoes. Cover again. Lower heat to simmer and let it cook for at least another hour. Basically the longer it cooks, the better it will taste.
Do this.

Put some chorizo in pan and fry up a bit. Stir in scrambled eggs. Stir with chorizo until mixed. Don't over cook.
Heat up giant burrito flour tortillas on stove.
Lay out tortilla. Fill with egg/chorizo and then lay on the crispy fried potatoes. Wrap your burrito tortilla.
Add beans/cheese if you like. Note: if you make your own beans, try Peruvian next time. IMO, better than pinto, which we never use anymore.
Eat a couple of Tums/GasX servings.
Set out your favorite beverage and enjoy.
