I made chocolate covered bacon last night.

It's my friend's birthday, so I figured, what the crap, I finally have an excuse to induce a heart attack.

Step 1: Fry your bacon. Make it crispy, but not burned.
Step 2: Cool your bacon on a rack, flip it so the grease drips off.
Step 3: Melt the chocolate in a double boiler. I used semi-sweet, but you could go with milk chocolate, if it suits your fancy. Add a touch of butter or margarine if you want the coating to be a little softer, or no butter/margarine if you want a harder, shell-like coating.
Step 4: Dip your bacon in your chocolate and put it on a tray. Wax paper will make your life easier here, or you will be scooping it off with a spatula (as I did).
Step 5: Eat as much as humanly possible while you feel your heart temporarly slowing down.

I would try this if i wasn't on a high protein/low fat diet.

Maybe i could take one day off and eat as much chocolate covered bacon as i can manage.

If you use a good dark chocolate, the antioxidants might counterract some of the bad stuff in the bacon.

Think I'll try it today. Odd combination, but that only makes it more interesting.

Yes, the chocolate/salt combination is amazing. I was going dust it with ground almonds afterward but it seemed like way too much work and my girlfriend and I were already half in the bag due to gin at that point in the evening.

I saw Michael Symon do this on the Food Network. He took it a step further and sprinkled it with crushed hazelnuts. Don't know if that was necessary, but it intrigued me. Guess I'll have to try it now.

EDIT: Yeah, maybe it was almonds. I don't remember exactly.
