It appears to me that the airstream shoots out the top of the knife tip, driving it downwards.
It looks like the knife is pushed into the board and then bounces back up. That could be useful, depending on where you stab the predator/attacker... or really dangerous. I would imagine in the real world it would leave an enormous gash. However this is probably less of an issue underwater, because there's much more resistance to prevent the knife and your arm from moving. |

Apparently it's not that sharp, and on top of that, coming from people with experience diving, it'd be a tough job to actually be able to stab a shark even with a sharp knife.
