Left and right wings

Not politics -

Turkey wings and chicken wings.

Every time I open a package of wings, they are all of the same handedness. All left, or all right.
So how do they get like that? Do they sort them? Does one worker cut off all the left ones, and
another worker cut off all the right ones? They do fit in the package and a baking pan better.

Holiday "spirits" make me wonder about things like that.

On a related thought...When you buy chicken breasts, are you getting rooster or hen? Will you be chewing on chest or breast?

I want to know why chicken breast is $1.49/pound and wings, which have far less meat, is $1.99/pound.

I used to like turkey leg, not anymore. But as I've gotten older, I prefer the white meat on the day of Thanksgiving. But when eating leftover meat days later, I prefer the dark meat. Odd.

I don't like legs either. But wing meat is excellent. White too if not dried out.

That reminds me, I see turkey wings and legs all year round, but not the rest of the turkey.
What do they do with it?

I think that's it - I just put them in a baking pan and they interlocked perfectly.

Most efficient, space wise.

Just salt and pepper. Salt, if used properly, is a flavor enhancer. Pepper, for it's flavor.
That's black pepper. Best when fresh ground right on stuff, but for cooking, regular old
McCormick's. Anyway it's the wing that's important here. And the crispy skin. Something
that's not available in any other form. They are cooking as I write this.

Ok, the wings needed turning over. These are not little buffalo chicken wings.
They are massive turkey wings. So you can appreciate the difficulty in turning
these things over. One slip, and you are covered with 400 degree Fahrenheit oil.
I learned to cook these the hard way - but it's worth it.

The wings needed turning again. It's getting difficult. The aroma is intoxicating.
Yet the wings cannot be removed from their cooking before their time.
