LOL I wonder if there are forensic psychologists sitting around trying to figure this guy out.
My opinion: Either the guy is stoned and is doing it as a prank, or he's stealing foam banana's because he found out that the molecular construction of them can create a highly potent nuclear explosion, and he's amassing large quantities of them to start a revolution against the Bolivian government and install a quasi-Marxist socialist-utopian regime that will become the world's leading exporter of merkins.
...The former scenario is pretty far-fetched, so there's a pretty good chance that the latter one is what's really happening.

The authorities have been attempting to apprehend the Mak-ster for some time now, for other nefarious activities involving beer, surfboards, and young nubile Asian females, without success. I highly doubt they will be able to change their success rate even now that he has expanded his range to Wisconsin and is wearing a gorilla suit instead of swim trunks. 
This scourge must be contained!
