To Maple Syrup experts

I found this jar of maple syrup that somebody gave me as a present years ago, maybe 10 years ago, not really sure. I can't find a manufacture date or a best before date.

Do any of you guys know wether maple syrup turns bad with time?

it's made by black sheep sugar house, and the jar is sealed.
While we are at it, you might tell me wether this is good maple syrup or not... is there a lot of difference with different brands?

Good to go my friend.

I have had syrup that was in an opened container and lasted (refrigerated) for a number of years.

Just scrape off the mold and you'll be fine.

Well, i just got so curious about this that i emailed the manufacturer. Evidently it's been a slow day at work.

If the lid is still vacuumed down to the jar you're fine. Sugar crystals may form over time, but the true test is taste and smell. If it smells good, taste it, if it tastes good eat it! (I think that method works for a lot of thing actually.)

It is possible for maple syrup to go rancid, but it's not likely, and even if it did go bad you'd smell and taste something wrong with it before eating enough for it to be any problem.

I'm Canadian so that makes me the only real expert in this thread so far.

If it smells bad = no eat, otherwise it'll be good.

Okay, my turn...

I'm not an expert but my Grandfather ran the maple syrup racket in North Branford, CT for decades. Its now managed by cousin, Dudley (and Vicki) Harrison. I've got a gallon of their syrup next to the computer and it reads:

"If any mold should form on top, reheat syrup and skim the top. It is harmless and will not affect the pure, sweet taste."

Meh, they build little stone people by the side of the road. Syrup good!! Except when it's bad, in which case you're screwed.

thanks for all the advice! good to know about the mould and the reheating process. I'm pretty sure It'll be good, since it's still sealed...

Lol! yeah, syrup good.

back here we have something that's supposed to be similar, called Kero, (edit, just googled it, apparently kero is made up of glucose and corn syrup?) but it doesn't taste half as good. Maple syrup is not common at all. we have our pancakes with "dulce de leche" (milk jam... sort of similar to caramel...)

Thanks for the enlightenment regarding canadian culture as well!

the bad news is that if you develop botulism, its a fatal, horrific, and excrutiatingly painful central nervous system toxin.
The good news is its a fairly quick death, so your good!

The best syrup is the runny liquidy kind that you just pour. I don't like to waste my time with the kind you have to squeeze out.
