I guess you would need to scout out locations - work out where would be a good place for a bowling alley (ie find somewhere that doesn't have any alley's nearby so you have a good customer draw). You can't run a successful business unless you have customers.
You would also need to work out costs (if you are buying, how much it will cost, plus any refits. If you are building/moving into an existing building, how much everything will cost to install - lanes, pin setting systems, ball collection, balls, counters, lockers, toilets etc.). You would need a loan, so start looking into those.
You would need to hire staff as well, and look at deals with companies like Coca Cola/Pepsi for drinks etc.
I don't know anything about running a business, so maybe you would have to start somewhere else, but those seem to be the practical things to me.
EDIT: When you say 'bowling centre' do you mean a shop? Because if you do, then everything I just said is rubbish.
