Need you food experts - Beer can chicken, give me your best

I want to make the most amazing beer can chicken.

Let me hear your magic recipes, sauces, spices, etc. I need to impress people for a BBQ.

Well it starts with a good beer. Why? Because people want to drink good beer instead of "Old Milwaukee." We always grab a 2x4 of Bud heavy for the chicken and then a case of what everyone is going to be drinking. Last time I think we got a 12 of Newcastle and a 12 of BL lime.

As far as seasonings go, we used the (semi) liquid McCormick's grillmates stuff for a while. Its thick enough that it sticks to the outside and has good flavor. We've also used blackened seasoning a few times.

I Beer-Can a chicken once in a while - but I dislike the paint coming off the cans so I just pour the beer into a canning jar and set the chicken over it and there's no poisonous paint fumes and melted chips in the meat.

One thing I tried was using Dr. Pepper and it's really good! Rub the chicken with a little crushed/candied ginger, salt and garlic powder - not real garlic - and you'll be in fat city for taste and texture. Oh - don't forget to butter or oil the chicken body inside and out first too and tie the legs together to keep it in shape.

Cook it slowly.

They make a stand that holds the chicken upright. I highly reccomend one.

Er...ever heard of Bisphenol-A?

Wikipedia:

"...Bisphenol A, commonly abbreviated as BPA, is an organic compound with two phenol functional groups used to make polycarbonate plastic and epoxy resins, along with other applications..."

"...Known to be estrogenic since the mid 1930s, concerns about the use of bisphenol A in consumer products..."

"...Epoxy resins containing bisphenol A are used as coatings on the inside of almost all food and beverage cans..."


I would never cook in any can that has not been "burned-off..." and I would never eat anything cooked in any can that has not been "burned-off..."

Call me paranoid, if you will, but I happen to enjoy the function of certain parts of my anatomy which are bi-laterally symmetric.

I posted some stainless ones I made a while back. I can't upload a photo until I renew my golden membership.

I use rubs that I buy or get as samples at the BBQ competitions. So far, I haven't got a bad one

We always pour the beer out of the can... Cast Iron skillet provides a much better base for the chicken stand.
