Anyone got a good recipe? I made some tonight, and it was good, but it could have been better. I made a sauce with fish suace, tamarind paste, sugar, and paprika; that sauce could have been much better, really hard to get the proportions right without any measurements available. |

I've had the owner write down several recipies and he even gave me some spices and ingredients. I've often watched him in the kitchen. All things considered, it's easier AND cheaper to just go to the restaurant  |

Depending where you are in Bangkok, sometimes it's hard enough to walk down the street for all the chicks-and-dudes-who-look-like-them coming up and trying to grab you. "Oh, you so cute...."

| | Registered User | | Join Date: Dec 2005 Location: Buffalo | | | I wasn't a big fan of fish sauce when I made it, but the tamarind is delicious. I'd reccomend fish sauce and sugar get added equally, lots of tamarind, throw in garlic and shallots as well.
Those egg noodles take like 30 seconds to cook, and shrimp can be thrown in at the very end, barely needs any cook time.

Some of her other recipes rock me a lot harder than her phad thai (which varies hugely by region and even by family in Thailand), but it's a great book for a novice American attempting to get into cooking Thai styles. |

there are tons of recipes online and in those things we used to open and read.... was it, books?
i love cooking foods from other cultures (usually asian), but i have discovered that i don't want to go thru the effort of trying to make them authentic. not easy to do when you are not from the culture, don't have the exact ingredients, and i feel a bit like a poser when i try. i make something i call "pad thai." it ain't what they serve in thailand, but me, my fam, and my friends all like it just fine. when i want the real deal, i can get it for $7 at a local mom and pop restaurant here in town (the owners/cooks are a retired professional couple who opened the place cause their son is in ph.d. program here).
btw, i suggest using rice noodles, as opposed to egg noodles

Of course, it doesn't take quite as much time and exposure to know what it should correctly taste like, but to properly create it yourself is another story. The easiest way is to date somebody who is Thai, and have them or their family cook it for you. That's what I did!
