I've been a Martial Artist for almost 20 years now and not a whole lot really gets me going on film. But i do like:
Jet Li - Especially 'Fist of Ledgend' and the 'Once Upon A Time In China' series.
Tony Jaa - I think he is the most talented martial artist acting today. (check out 'Onk Bak' or 'Tom Yum Goong')
Gordon Liu - WAY underrated and overshadowed by the more charismatic Bruce Lee in the day. Check out 'Shaolin Master Killer' (AKA- '36 Chambers') and 'Hero From the East'.
Donnie Yen - Usually cast in supporting roles, but man is awesome. See 'Iron Monkey' for a star roll and two awesome fights against Jet Li in 'Hero' and 'Once Upon a Time in China II'.
Johnny Tri Nguyen - I first saw him as a badguy in Tom Yum Goong, but his movie, 'The Rebel' is awesome. He's still relativley new on the scene but i think he has a lot of potential!
Finally, one of the best single fight scenes i have ever seen... the final scene from the otherwise 'meh'-riffic movie, 'Gorgeous', Brad Allan vs Jackie Chan:
