Funny story, I'm a chef by trade, I used to work in a 5 star hotel near the Amsterdam airport. One day I take the shuttle bus from the airport to go to work and meet a couple from Monreal. So we start chatting a bit and I tell them I'm the chef at the hotel. Next thing I know, for dinner that evening a waitress tells me the couple wants to eat poutine.
So I made them a poutine with 4 or 5 sorts of nice european cheeses: Port Salut, Edammer and a couple other I can't remember. I topped it off with a Red Port sauce. They both said it was the best poutine they ever had.
EDIT: When I migrated to Australia I was very surprised to find a fast food joint called "New York Fries" that actually sells poutine  Unfortunately they served it with schredded cheese  |

I've only had poutine with regular gravy and regular white cheese that I think is mozzarella. I tried it once with italian sauce and once with chicken but it isn't the same. I love them chewy cheese curds, melting in all that gravy...
I wouldn't be opposed to trying it with other cheese though.
New York Fries here in Canada doesn't do them with shredded cheese...just regular cheese curds.
My australian co-worker would NOT touch poutine. |

Some places might call them "cheddar fries with gravy", some call them "disco fries" (my theory on that one is that they were a cheap comfort food that young people would get during a quick stop-off before or after going out dancing for the night). Some places will offer it with bacon too.
