Ouch, that's a tall order.

You're looking at a higher mileage Silverado or F-150 at that price point. Probably about 1996-2000 model years.

Is she looking for a daily driver or a work truck and won't mind a few scratches?

I have a 96' Silverado X-cab 4x4 with the 454 V8 and i can't give the thing away (it only gets 10mpg) I've been asking $1500, so I'm sure you'll be able to find something decent in your price range. Go Japanese if she can find one she likes.
Best,

Its going to be a work truck, hauling plants and such around, so scratches are fine.

Mid 90's Chevy W/T's can be had for a song. They're plain Jane and usually long beds but reliable.
