Our daughter is sick.
She's been barfing all day. I hate not being able to do something for her, and I'm also worried that she can't keep anything in- including water.

Sucks when the little ones are not well. If she continues to reject everything - especially fluids, call your pediatrician. You have to be careful she doesn't get too dehydrated.

I was thinking along Ensure lines- even though I know it would be too "thick" for her.

If shes barfing alot or has the runs she needs the electrolytes. The problem with water is that it doesn't replace anything besides volume, electrolytes keep dropping and it can cause other problems like seizures. Of course it'd take a fair bit-o-chucking to do that.....like someone already said it can happen in kids relatively quickly.
If it keeps up for more than a day or so I'd reccomend a trip to the clinic.

I had my wife send bunches of it to me when I was in Iraq. Going on convoys for days at a time with very little water is a good way to get dehydrated.

To soothe the tummy and give her fluids, nothing beats warm Jello in her favorite flavor. My mother used to give me that, and it was soooo soothing.
Chicken broth is also good. No noodles, no meat...just broth.
When she feels a little better, but isn't quite ready for "real food"...
Regular ol' saltines are good to take little bites and chew slowly.
Bananas. They replace so many nutrients, and can be eaten just a little bite and wrapped back up in the skin to keep well for later.
These things, plus water, are good for her when she has a stomach virus. I've been through these with two kids, and they always work.
