My girlfriend is also vegetarian and that famous quote "My girlfriend is vegetarian, which practically makes me one too." really is hard to avoid. If she really is serious about it you might want to get her some more chopping boards, knives and possibly pots too so she feels more comfortable about preparing food in your kitchen. Keep buying meat for yourself, just don't wave it in her face or try and force her to have some, just respect her choice and make sure she respects yours to eat meat as well.

She's currently reading  and is convinced that by going vegetarian she can contribute to pressures on the meat industry to reduce cruelty to animals and improve the quality of the meat that does go to market. I am being strong armed into joining her campaign.

You really think you may end up a vegetarian? Really? Come on... I dated a veggie once, and it never affected my eating habits. Cook meals that meat can be added into. Just don't add meat into her portion. Or, god forbid, tell her to cook her own vegetarian food. Her decision to go veggie should not impose upon your eating meat.
