..because no one knows what they are.

If I didn't go through Binghamton every summer on the way to the ADK's, I would never have known either.

Is it freakin speidie day? Even Tony Kornheiser was talking about the Binghamton delicacy this morning.

For the regionally unedgemucated, speidies is of Greek origin and consists of grilled, marinated, lamb, served on a skewer with a slab of white Italian bread.

It has been expanded to often include Chicken or pork, but almost never beef. Don't know why, it is an excellent formula that would appear to work well with any diced meat.

mmmm-MMM! Speidies is Good (expletive deleted)!

I understand that the secret of good Spiedies is the sauce, which is kind of a salad oil based affair in which the meat is marinated for a period of time up to (but not exceeding) forever.

Correct me if I am wrong.

You have it right, but just to be clear about the "forever" part. Forever is a completely acceptable marinating time providing that at the point when forever is reached, someone is nearby with a grill and some bread.
