Hey!
The Super Bowl is this Sunday!
Henceforth....
Super Bowl Sunday
We have a tradition in our house, we always make Chicken Wings/Buffalo wings/ hot fire wings
got any recipes to share?
(mine are very basic, and made up on the spot....not too original)
so, looking to get some other ideas!

Hot 'n' Spicy Chicken Wings with Blue Cheese Dip
Dip:
1/2 cup sour cream
1/2 cup mayonnaise
2 teaspoons white wine vinegar
1 tablespoon fresh parsley chopped
1 tablespoon green onions, chopped
1/2 teaspoon garlic, minced
1/2 teaspoon Tabasco sauce
3 tablespoons blue cheese, crumbled
Salt and pepper, to taste
Chicken Wings:
12 chicken wings
Vegetable oil (for frying
4 tablespoons butter or margarine, melted
1 teaspoon catsup
1 teaspoon Tabasco sauce
Celery sticks
In a bowl, beat together all of the dip ingredients until blended. Set aside.
Remove the tips from the wings and discard. Separate the first and second joints of the wings with a sharp knife. Pat the wings dry with paper towels.
In a heavy saucepan, heat about 2 inches of oil to 350 degrees F on a deep frying thermometer. Fry the wings. a few at a time, for about 6 minutes, until golden brown on all sides. Drain on paper towels.
In a small bowl, mix the butter, catsup and Tabasco sauce. Toss the wings in the butter mixture to coat thoroughly. Serve hot, and pass the dip and celery sticks.

2. mix hot sauce (I use Crystal) & butter in big tupperware container
3. put wings in tupperware container with sauce
4. put lid on container & shake vigorously
5. remove wings & let them cool
6. eat wings and drink coldbeer

| | Registered User | | Join Date: Dec 2008 Location: Michigan | | | Of course it's always a matter of taste...but one technique I like to use for wings is also good for any time you want to fry any part of the chicken.
Put the chicken in ice water in the fridge over night( buttermilk is better...but more expensive)...this will help eliminate the black blood spots in the chicken after frying.
About an hour before ready to fry....drain and wash the wings. Mix up a bowl of flour seasoned with salt, pepper and paparika. Put out as many racks as you will need...then coat the wings in the flour mixture and let sit for at least 15 minutes. While they are drying....make your favorite sauce....whether it's franks red hot or Durkees and a stick of butter....or for a change, I like to cook up a pot of good smokey BBQ sauce...add some ketchup, and a can of Dr. Pepper. Get it nice and hot and dowse the wings in it right before serving.
Now that the wings are nice and dry with the flour on them....you can go one step further by having a bowl of milk and eggs and a bowl of seasoned brad crumbs( as spicey as you want). Dip the wings in the milk/egg mix and coat in the breadcrumb mix...set back on rack or go directly into 320F fryer. Wings will be cooked in about 10 mins....and you'll know when they start to float in the oil.
Now you can put whatever sauce you made before hand on them...or eat them just like they are. If you made hot ones...ensure you put out some chopped up pieces of clean carrots and celery and lots of blue cheese dressing. Yum Yum!
This technique helps to seal the juices inside, and the wings will plump up when you fry them.

dredge them in straight cornstarch and a few spoons of cayenne pepper, if you like it HOT
then straight to the fryer!!!
it a metal bowl (<-- important) Mix your hot sauce (i Like Texas Pete's or ) and dry hot powder( more cayenne pepper) and Butter (heaps of the stuff)... toss while the wings are hot!!!
best and easiest tailgate recipe!!!

wither franks or Tabasco and butter is the only way to get a real "buffalo wing"
we have our own secret wing sauce... but if i told you, i'd have to kill you... for samples visit the flip side in strykersville and have the abbott sauce

First: the chicken
Find some good-quality jumbo wings. Whole wings, not separated portions and "drummettes." Do not batter, bread, or season them. Just deep fry them until done.
Second: the sauce
Get a large quantity of Franks Red Hot Sauce. I get it by the gallon jug at certain places like Smart & Final. Maybe CostCo might sell it that way too. Get some unsalted butter. Frank's sauce and butter is all you need; combine in a 2:1 ratio, Frank's : butter. While the chicken is frying, just melt the sauce and butter together in a small pot on the stovetop. Don't boil or scorch it, you just need to mix it together well after the butter melts, and then keep it slightly warm until the chicken is done.
When the chicken is finished, drain well and then put it in a large container or bucket that you can put a lid over. Pour the sauce over the chicken, cover, and shake so that it coats all the chicken. Serve with decent bleu cheese dressing as dip, and optional celery (I hate celery myself).
If you want spicier wings, just sprinkle on some Tabasco.

I like equal parts Franks' hot sauce and butter. Add a tablespoon or so of honey for hot'n'honey wings.
Or, just go to the Picallili Inn or a PJ Whelihans.

Deep fry or broil the wings.
In a saucepan, heat up a little less butter than hot sauce, and add vinegar to taste. Pour over the wings in a bowl and mix 'em up a bit.
This is the hot sauce I like.
Blue cheese dip is simple too.
About 2:1 Sour cream to miracle whip. Add some crushed garlic, and rosemary. I'm not sure about how much blue cheese, but throw some in until it looks good, and mix it really well. Its best if its been refrigerated for a bit. |
