What BBQ do you prefer?

I'm from Kansas City and am a BBQ fanatic. What does everyone like in their bbq and what region do you prefer?

Texas, Memphis, the Carolinas, Kansas City?

Aint nothing like eatin a rib and then pickin up your bass. A little soul sauce does wonders for the sound

I'm a fan of KC BBQ, however I do dig the Carolina style as well. I like the spicy Texas style sauces, but I'm not a huge fan of beef ribs.

Good BBQ in any form is acceptable. Wet rubs, dry rubs, sauces.... bring it ON!!

Not sure I have had KC BBQ, I do like VA BBQ that has a red sauce and NC BBQ. Has to be cooked over wood!

Here is a good cooking sauce for NC.

1 gallon of Apple Cider Vinegar
1/2 pound of salt
1 small container of Cayenne pepper
1 medium container of Crushed Red pepper
1 quart Texas Pete

Mix up at least a week before you cook the pig. Use this to baste the pig as it cooks.

When I was working in textiles, I was the maintenance manager and it was the responsibility of the maintenance department to cook 5 pigs and have them ready for the Friday of Memorial weekend for the company cookout. We would set up 10 burn barrels for hardwood and use the hardwood coals to cook the pigs.

I can't tell you how much that pains me to hear... though I am quite happy for you.

I spent my formative years (5-27) in KC (OK, Overland Park) and I absolutely love KC style BBQ. I toured the majority of the US and never found anything even close. I did find lots of good stuff, just nothing the same.

I flew into KC just over a year ago for 3 days to visit some friends and play at my former band's final show (sat in on 2 tunes)... I ate gates 3 times in 2 days! Awesome!

I am in VA and love BBQ though I don't know if I have ever had KC style BBQ. Just had Memphis style today at lunch and man it was good.

I like them all and appreciate the differences, but after spending 13 years in TX earlier in life, that's my favorite. And the secret of Texas BBQ isn't in the sauce, it's in the smoking!

Within six months after moving from TX to Colorado, I bought a New Braunfels smoker and started using it. Once you've had good BBQ, you just can't go cold turkey (pun intended).
