what to make?

4th of july here at the house for 9 adults and 4 young uns. dont wanna do the burger, dog routine. ribs are to high for that many. the price of chicken is outragous. i have hotel pans and warmers and a great knowledge of cookin but what should we have for our guests? how about suggestin a complete menu. thanks.

Don't know about a full menu, but chili always goes over well.

Appetizer - 16oz of Velveeta, 16oz of Monterey Jack cheese, freezer cube of creamed spinach, 1 clove of garlic minced, sour cream.

Cube cheese and melt together in a pan, add creamed spinach and garlic, transfer to a warm (low or keep warm setting) crock pot, stir in 3 tablespoons of sourcream right before serving. Use Tostitos tortilla chips for dipping. Kids and adults LOVE this dip. Salsa on the side works well too and jar salsa is cheep! This dip is pure food crack.

Dinner- buy some pork tenderloins (chops work well too). Roll them in cumin and black pepper. Take plastic wrap and wrap it around the loins and set aside for a few hours. Take about 1 1/2 cup of oj, 2 jalapeno peppers dices, 1 clove of garlic or shallot minced, 2 tablespoons of cider or malt vinegar and a 1/4 cup molasses and bring it to a boil in a pan. Let it boil down until thickened to a syrup consistancy.

Grill the tenderloins (works with boneless chops too!) on the grill until done, let meat sit off the grill for 15 minutes and slice into medallions, drizzel above jalapeno orange sauce over medallions. The molasses takes some of the heat away for sensitive stomachs.

Salad goes well with the dish as well as corn on the cob on the grill. A potato (or mushrooms and tomatoes), onion, squash grilled medley soaked in balsamic vinegar and honey works well too.

Well we're down in Australia and all my friends are using July 4th has an excuse for a party.

We're doing nothing more than a bbq with sausages, kebabs, salad and coleslaw, steak perhaps.

No beef, no chicken....what's left for protein....how about cooking a full turkey dinner with a side of ham. That way there's something for everyone.

If you have room on the grill, Beer Can Chicken!

Getting the whole chicken is cheaper than buying parts. The only downside is it's a slow cook method and needs a little time on the grill to cook. I will usually get a couple of smaller hens instead of a bigger chicken to cut down on the cooking time.

Best chicken you'll ever have on the grill, though.


Chili sounds like a great idea too. I haven't made it in a while. Mmmmmm mmm!

Now I'm really, really hungry!

grillin for sure. great stuff folks. i like the beer can chicken idea. burgers are good but over done. everyone has burgers. i welcome all beef and chicken ideas. is mac and cheese acceptable for a 95 degree day? keep them ideas comin. thanks.

Oh yeah, done that on the grill before.
Saute some peppers and onions too!

Just keep an eye on them. They're a little greasy and can flair up on ya.


I like the kebabs idea too. Nothing beats meat on a stick.



I've always wanted to do a traditional clambake on the 4th.

Mmm y'all are making me hungry!

Chili dogs and burgers are the best thing to grill, IMO. A big slab of chili on a juicy cheeseburger, that's where its at.

get a couple of pork shoulders and grill them indirect for 3-4 hours (unless you have a rotisserie ) throw some onions and peppers on there towards the end (about 15-20 minutes) and you're golden.

Dry rub that pork shoulder with kosher salt, fresh black pepper, garlic powder, chili powder, cayenne pepper, cinnamon and brown sugar. No need for sauce, but if you want to you can mop it on at the end. I'm telling you, it will be perfect for sandwiches and you will be the hero.

You didn't know it's against the law not to grill or BBQ on the 4th? I will have a brisket, ribs, and 2 huge salmon on planks in my smoker all day long
