What's Your Favorite Style of BBQ?

After being in the Carolinas, and overdosing on BBQ, I was wondering what style of BBQ folks like the best.

I like some NC style, but Brazilian is tasty too.

This saturday we played a friend's BBQ Challenge. 6 teams made ribs, pulled pork and tri-tip for awards and bragging rights. It was heaven, but I was a road slug on the second set after eating (3 kegs, 8 x 30 packs of Coors Light and they still went for more). NC style is my favorite.

We played Sat night as well and I was gastro-recovered but still smelling smoke on my strap this morning!

I loves me some KC style, but SC is mighty fine as well. I do like good TX style BBQ as well (They have some spicy ***kickin sauce!), but I have a had poorly prepared beef ribs before so points come off for that.

Brisket is where you separate the men from the boys in BBQ. I have had some nasty BBQ brisket, and I have had some awesome BBQ brisket, but I have never experienced a brisket that I didn't feel strongly about. It's either the best thing you've ever had in your mouth, or poo.

Pigs actually do have a lot of personality.

I like beef or pork but the sauce has to be tomato based so I'm your average KC BBQ man.

I was sticking with American BBQ, and for many BBQ=pork.

Dry rub, slow smoked with a tasty zesty sauce or sawse or sause on the side. Brisket and sausage for me please! BBQ smoked turkey & ham is also quite popular. Don't forget the cabrito goat bbq very tasty. Not big on chicken but I recently played a place that did a "Texas BBQ Duck" that was simply divine.
