Grate some fresh ginger, spread onto a cookie sheet or pyrex plate, whatever. Place in oven on low heat. (I've been using an old electric roaster oven on the lowest setting) After a little while you will have some very nice dried ginger for tea, cooking, baking, whatever. I like to use a simple tossed together blend of this with citrus peel and officinalis sage leaf for tea.

How do you guys peel garlic? I use the flat side of a large kitchen knife and smash the clove on a cutting board.

Same here, chef's knife flat on the clove, whack with the palm of my hand.

I read something interesting about garlic once. Raw garlic has a tremendous beneficial effect on one's health, and it's sometimes called a natural antibiotic. Like a lot of foods, much of those benefits are lost in the cooking process. However, I've heard that if you process the garlic (dice, mince, etc.... whatever the recipe calls for), and then let it lay on the board for 10-15 minutes before cooking it, it retains much more of its natural benefits.

Could just be bull****, I do it anyway. I need all the help I can get.

I was at a gig at a neighbouring symphony one time and the whole bass section (all men) went out to lunch. We talked about cooking, (recipes, pots & pans, knives, etc.), kids, houses and other domestic stuff.

When we got back to the hall, a bunch of women asked what we discussed. We told them the above. They just rolled their eyes and thought we were making fun of them or something. Ha ha.

If you're feeling under the weather, four words: Lemon Ginger Hot Toddy.

(HOT herbal tea, honey, fresh cut ginger, fresh-squeezed lemon + Irish whiskey. Makes me look forward to cold season.)

+1 to the toddy - but i substitute fresh garlic for the whiskey (not kidding - bloody amazing antiviral).
