The reason they specify this is that an unregulated "9v" supply actually puts out 12v or so when only one pedal is plugged in. Any unit that requires regulated 9v does so because sending more than 9v into the pedal will damage components not rated over 9v.
You may be thinking of "isolated" power supplies, in which each power output is coming from a separate tap or regulator. The 1 Spot is not isolated, but the E600 manual doesn't need it to be, just regulated, which the 1 Spot is. |

I just looked at the manual and it only says "OPERATE WITH 9V 200ma 2.1mm NEG TIP REGULATED (if not regulated, you could kill your new pedal)". The 1 Spot meets or exceeds all those requirements.
It's probably worth asking Malekko.
The 1 Spot is a switch mode supply, and it might be the case that the clock frequency of it is very close to the Ekko's clock freq., in which case they would heterodyne, causing nasty noise to fold into the audio band. Just a guess. |
