Why hasn't Akai reissued the Deep Impact?

Seriously.

Did they just hoard several thousand and are now selling them on Ebay for $600? I feel like now that there has been time for the hype to build about them, they would have no problem selling these if they were brought back.

And I want one!

For the same reason they stopped making them - money.

To make a new production run of them at a price that would be reasonable (sure some people will pay $600+ but not the average player) they would need to be certain that they could move a certain number of units. If they thought that would happen and they'd turn a profit, it would already be back on the market.

So you need to either wait for a deal on a used one to come along, or hope that the Chunk Systems Octavius Squeezer is as good as I think it will be. (And have a reasonable price tag).

+1, and note that we've had this thread before, with the same answer, including from industry insiders. There will be no reissue because it's not cost-effective for Akai.

Besides, no one is gunna buy a reissue because the vintage ones are always better.
