What is the advantage of having adjustable pole pieces as in Dimarzio Model J's? How would you know what the correct hight is to set each of the 8 pole pieces at?

FWIW:

if they work, the advantage is if the pup is out of balance, you have something besides pup height to work with, which can be especially useful on adjacent strings as say getting the A where you want it from a height adjustment could make the E too strong. Some pups with adjustable poles don't seem to make any difference wherever they're set. Don't think I had to mess with the Model J's.

You know what the correct height is by adjusting pup height to get a tone you want, then adjusting adjusting the poles if that doesn't cut it.

You just have to tweak till you're satisfied or fed up. Most guys who are fed up either turn to other variables or send the pups packing. Trial and error which in time becomes experience which makes you more capable of getting you where you want to go with what you have to work with.
