The set includes three 25k ohm pots one as a single tone. typically they are either pre-soldered as a harness or the newer sets are a plug in connector. If you want to go with stacked knobs, you will need to order two additional parts from EMG and do your own soldering. The part is listed here as EMG (A25KX2) Stacked Volume Pot (25K). Potentiometers - Pots | Jacks | Switches | Shielding
You will also need two tone capacitors for each of those volume knobs. EMG's use a .1uf Cap. you will need two of those. Keep in mind, you are loosing the ability to run different tone caps with each pickup like the stacked knob setup you are using right now. The cheapest option for you is to order a 4 hole Fender Jazz Bass control plate, and use the supplied pots with the EMG J-set. Going to a stacked setup will run you around $25-30 in parts, the control plate is $15.

2) I don't quite understand your second question - do you need to buy a control plate as well? The 2nd link is the same as the first one. The pots on my EMG pickups fit the holes on a standard Fender Jazz 4-hole control plate.

get yourself a 4 hole control plate. I like the fender parts up top, but your preference.
and for knobs, these should work just fine:
found on this page: Guitar Parts Resource* ::*Genuine Fender Knobs
The ones that say vintage on this page work too, i use those: Guitar Parts Resource* ::* Jazz Bass Knobs
As a general recommendation, avoid "import" styled parts. Your bass isn't import. Why not slap the Fender authentic parts on there?
