Well, you cannot come up with a precise, definitive answer, as the percentage of amplitude change with 250K, 500K and 1M ohm parallel resistive loads would change with the circuit's impedance, and therefore, be based on the specific pickups in question.
You could, however, probably come up with an estimate that with average (X pickups) you could expect however many decibels increase or decrease in amplitude.
It's a much easier idea to simply try it out. Pots are cheap, and if you can solder, it's only a few minutes work to swap them around.
