You don't need a mixer, just get an interface with the number of inputs you want to record at once, plug into it and call it good. Keep it simple.
Download manuals and make sure it is capable of accepting mic, instrument and line levels, to be compatible with whatever you are wanting to connect to it.
If you like mixers then try something like a Mackie 820i or 1220i and you got an interface built in and it will work with instruments, keyboards, or mic's
Many starting out "think" they need a mixer but its not really required. An interface IS required and usually has the inputs required without a mixer.
The mixer is in your software.
If you want to record 8 sources at once,
Get and 8 ch interface.
You can run a 16 channel mixer into a 2 channel interface but you're wasting your money on the mixer because you can still only record 2 things at once to their own tracks.
