Many stereo speakers are "colored" to "enhance" the sound. In other words, they are not necessarily accurately representing the music.

Studio monitors are supposed to be "flat" so you hear music more realistically.

You don't want to try to mix your music using speakers that are putting extra bass or treble into the mix. It will cause you to add or subtract frequencies unnecessarily in the mixing process.

I am no studio engineer, but that's my layman's take on this subject.

(leaving the post, but it looks like I'm a day late and a dollar short)

Probably a gross over-simplification:

The makers of stereo speakers design their product to enhance/change the material so the music sounds better/best to a listener.

The makers of studio monitors design their product to replicate the actually recorded material so the listener has the most accurate playback of the music.
