would it be wise do put two truss rods in an 8 string?
or if the neck is built right and stable just one?

truss rods are not for stiffness, but for adjustability.
I would (will...) use 2 rods on a 8 string, because of the wide fretboard, and the big difference between the highest and lowest strings amplitude/thickness.

Two. Parallel to the edges of the neck but not so close to the edges that you expose the rod channel from the back.

I think I should stress how true this is, as this happened to me on my current build with two truss rods.

Be careful!

might also be a good thing to put a carbon fiber rod in the middle of the neck, and 2 truss rons parralel to the sides. also multiple laminates of quarter-sawn wood are going to help alot as well.
