Is there a standard height for jumbo frets or frets alone?

There are a lot of different fret sizes. Check Stewmac, or warmoth. They have the sizes explained.

Are you looking for crown height? If so, most Jumbo wire has a crown of around .050" to .058". But can vary more now with pyramid shape wire, and stacked crown found in custom tall wire.

Nope. If it is level and no buzz then it is the right height.
