ok, so this isnt really a question about the glue to use, but rather about how to stop it from seeping out from the heel end. i usually do some pretty intracate fret board heels and its a real pain to have to try and sand that glue seepage out of there, so any ideas, or what methods do you guys use

Because you asking this probably not an option but how about sculpting the heel when it has been glued?

Another option would be to protect those difficult places with tape which would peel off easily as soon as you have clamped the fingerboard and leave dry and clean surface.

Or, could it be possible to use same tape trick as with truss rod channel, tape on area which the fingerboard will cover, apply glue, remove the tapes and clamp the fingerboard. Idea being that clamping pressure will push the glue on the areas covered by the tape...

Just some food for thoughts...

The tape or some other glue protection material is a good one. With standard wood glues sometimes all it takes is some experience to get the right amount so that you get a minimal squeeze out to clean up. Also, if you wait until the excess glue dries to a leathery texture it peals off rather easily and cleans up well too. Waiting until it is hard and dry can be a bit of a pain to deal with.

Hide glue cleans up with warm water even after it has set up, and leaves no trace that a stain or lacquer will pick up. Just another reason to give it a try.
