Galloup is a great bet. They have a very storied reputation. It was the original shop of Dan Erlwine ... you know, the guy from Stew-Mac. Brian Galloup worked with Erlwine back then and bought him out when Erlwine went to work for Stew-Mac (back in the mid '80s, I think). Brian and his crew are top-notch. Not only do they offer the 6 month course, but they offer an 8 week one, as well. And one of the perks of the course is that they provide housing for free!
