The difference with the wood for the fingerboard has to do with one being softer than the other Maple is harder and has a brighter "slap" tone rosewood is softer and has a mellower tone. Ebony, is harder and brighter than Maple but more expensive and almost always fingerboard only but I know Warmouth sells an All Ebony Jazz Neck. Graphite would be in the range of Ebony and Maple but you can get combos ...graphite neck wood fingerboard or graphite finger boards (usually fretless) and there are other tonewoods other than just these
