I'm planning on getting me one of them Saga Jazz bass kits to experiment with. I'm either going to put some type of veneer on it, or paint it Surf Green using Reranch paints. If I were to apply a veneer, what is the ideal thickness of it? I've seen all kinds of sizes, but I couldn't figure out what the best size is, or if that's just based on opinion.

Easiest thing to do is get a veneer with the standard 1/42" thickness that you can find dime a dozen on ebay. This will make it easy to cut out the pickup/control cavities with a knife. Anything thicker, then you'll need to reduce the body thickness to compensate for the height of the added top. Otherwise, you'll run into string height issues.
