I have a directive to suggest a Jimi Hendrix tune for our cover band. I can't think of a single one I've played in the past that went over as consistently.

That one seems to appeal to everyone, even the LCD in the crowd. We do some more obscure stuff like Over the Rainbow and Machine Gun on occasion and the real Hendricks fans love it but overall response is variable.
Here's a couple frequently covered tunes that get consistent good response for us. I call my guitard "The Great White Jimi" because he is so into playing the Jimi. I told him 6 Jimi songs per night MAX and no more than two per set. I think he would love to be a Jimi tribute band but he realizes that NOONE can fill those shoes :

Fire was lots of fun, never seemed to get much love though.
Voodoo Chile is very recognizable, but I don't know that it's a real winner. Likewise purple haze.

The thing is with Hendrix is that if you're judging how well it's accepted by the dance floor, you're missing out on what his material can do. Hendrix is meant for melting faces, and if you have a guitar player who can do it over a tight and busy rhythm section, it will go over. The key is not to just play it, but sell it. My old guitard did a great job of owning and selling our Hendrix covers. I do Hendrix in other cover bands now, and I'm about 1/10 of the guitard of my old bro, but I make sure I sell it and make a show of it, and it usually goes over. Dance floor may not have been filled, but the jaws dropped, high fives, shots from the crowd and cheers afterwards told me they liked it.

We really OWN it, though! We added a verse, from the Electric Ladyland "Voodoo Chile," (which is a long blues jam,) and we do some different jams in it, with more creative rhythm section work than the Experience did, (at times, my bassline is not even remotely connected to the song,) and Arthur does all the Jimi tricks (behind the head, with his teeth,) and some stuff he stole from RATM's guitar player.
It doesn't just go over, it's the song that consistently has the crowd breathlessly telling us how we're the greatest band ever, etc.
And it's the song we least thought likely to do that.
So, really, you can do any song by any artists, but make sure you do it like you mean it.
