I voted two, but agree that the second guitar player should also be a keyboardist, or dancer, or whatever. Two guitars all the time is overkill, but sometimes, it's just what the song needs. Obviously, I'm the bassplayer, but sometimes I play my Little Phatty, and it's nice to have that "extra guy" available to fill in the holes.
