Trying out a new drummer

So, due to some issues that need not be delved into at this point our drummer is leaving the band. We have a couple people interested and ready to come "jam" with us.

I'm wondering how you'd go through the tryout process with a drummer?
Do you sit down with him, one on one? Have him play with the band as a whole? Do you instantly start trying to teach the new guy parts and see how he does?
I mean, it's a little unfair to try to tell whether he's right for the band based on his ability to play a few songs he's never heard before...right?
