Would you fretless players recommend an adjustable bridge on a fretless?

Fretless basses need the same adjustments as a fretted bass. If you are asking for bridge recommendations, Schaller, Leo Quann, Hipshot, Gotoh and Fender all popular.

Of course, no way to adjust action to taste without such.

well, not really true. You can adjust action, just not by the turn of an allen wrench.

Plenty of fixed bridge basses out there, and they get adjusted. I think the OP is asking about adjusting for intonation. The fact is that with fretless adjusting the bridge for intonation is less of an issue.

My fretless is a converted fretted, so it still has the lines on the fingerboard, so I set my intonation using the bridge, which is a good thing.
