I had another go on a CV Jazz and I found it to be a bit "thin" sounding. I really liked the neck though. Do you guys think the VM Jazz will sound a little bit "deeper"?

Perceptably maybe but noticably no, very minor eq-ing will bring them both to par with each other. The tone knob is your aggression control.
the CV J has 60 p/u spacing , the 70's has 70's spacing , the natural finish one [idk]
Get them all !

What do Squiers typically weigh?

No. As has been stated twice already (and I can personallly vouch for) the natural VM has 60's spacing.

From what I've read, they seem to average around 9-10 lbs. My VM P weighs about 9.5.
