Oh, I don't know...
My "Big 3"-
How 'bout Earth, Wind, & Fire doing "Got To Get You Into My Life"? (Verdine White ripping & groovin').
Also, Aretha Franklin's "The Long & Winding Road"(from Young, Gifted, & Black) is killer(Chuck Rainey on bass...I think).
Chaka Khan's "We Can Work It Out"...absolutely smokin'! (Gregg Philliganes on synth bass goin' off!)
The Brothers Johnson have covered "Come Together" on their debut, Lookin' Out For #1...I can't seem to remember too much about(I'll try to re-visit it later today...gotta fire up the ol' turntable).
BTW, GRP(the Contemporary Jazz label) released an album dedicated to The Beatles...
Groove Collective does a nice job on "She's So Heavy"...Diana Krall does a nice job on "And I Love Her".
Motown Meets The Beatles(the classic Motown stars like The Supremes, Temptations, Marvin, Gladys Knight, Edwin Starr, etc).
Jazz guitarists Wes Montgomery & George Benson(The Other Side Of Abbey Road also have done tribute albums to The Beatles.
Nick Cave - Let It Be
I also dig Rufus Wainwright's "Across the Universe".
"Help", sung by Tina Turner
"You Won't See Me", sung by Bryan Ferry
"Tomorrow Never Knows" - Garaj Mahal
Jeff Beck's "She's A Woman".
Adrian Belew's "I'm Down"
Rufus Wainwright's "Acroos the Univerese"
The Wallflowers "I'm Looking Through You"
Joe Cocker "A Little Help from my Friends", "She Came in Through the Bathroom Window"

Damn...totally forgot about that one! Kinda in a Reggae-R&B-Funk groove with some very nice jazzy guitar chops by JB.
No one is gonna mention Tiffany's "I Saw HIM Standing There", huh?
Deep Purple did a cool, haunting version of "Help".
I also like Yes' version of "Every Little Thing"
Cheap Trick - Day Tripper
Bela Fleck - Oh! Darling
Godhead - eleanor rigby
That's my fave Beatles cover.
There's also a hilarious John Hartford cover of "Hey Jude," which I heard once and have never been able to find since.
MARCUS MILLER'S "COME TOGETHER".
Wickedly funked-up wersion.
and you gotta love that bass / drum groove on Earth, Wind, and Fire's "Got to Get You into My Life".
