I've got a pair of Mesa Diesel cabs that I'll be running off of a bridged QSC RMX850. The cabs only have one 1/4" jack each. Would I be able to "stack" the banana plugs, thus running them in parallel? I'd rather not have to make a speacial parallel 1/4" plug Y cable.

    Are they 8-ohm cabinets?

If the total impedence of both cabs together is 4ohm or more, all is good, just make sure you get the polarity of the cab leads correct (won't hurt the amp, but out of phase with give you a decrease in volume).
