Stuff like boiling water or alcohol will very probably damage the coating, but what about cleaning them with a little dish soap and a cloth? I have heard people use dish soap to clean strings because it's made to be hard on grease and dirt but soft your skin, therefore it won't damage the wood, so I thought it might not be harmful to the coating. Has anyone tried/is willing to try on old Elixirs he'd be throwing in the garbage anyway?

You would need to rinse the strings. I would use alcohol wipes or contact elixir and ask what they recommend. They might even have this question of cleaning, posted in a faq on their site.
