I've heard a lot of people mentioning disconnecting tweeters as a method of quieting hiss and taming high end, and my Yorkville xm200 has some hiss. No adjustment knob, so i was thinking of just taking it out to see how it sounds. The question is, do i just disconnect the wiring to it? Or do I have to do some other wiring?

You can just disconnect one wire, being sure to tape the end so it can't short out. You'll lose the hiss, which is caused by the amp, but you'll also lose your high frequency response.
