Are there any sonic differences between a rosewood and ebony tailpiece, or is it all aesthetic?

It's not that simple, but yes, there are certainly sonic differences. If you post in the "setup and repair" forum, you'll get lots of expert perspectives.

And some not-so-expert perspectives (like mine), but from experience the differences can be substantial.

Agreed as well. Some basses respond better to a lighter weight tailpiece, and some a heavier one. Ebony is dense and can be heavy. In my experience basses with thinner tops tend to benefit a bit more from a light weight tailpiece, but YMMV.
